Green coffee is the fruit of a plant, which grows in special climatic conditions. Each country has its own unique soil and climate characteristics that influence the characteristics of green coffee itself. The main types of coffee that dominate the market are:

Arabica coffee

Arabica coffee has a large oval or elongated been with dark green color, is sweet, quite dense, rich in aromas and slightly acidic, with low caffeine content.

Robusta coffee

Robusta coffee has relatively small grains, 5 – 8 mm long, round. This coffee is full-bodied, less dense, and less aromatic than Arabica coffee. Contains twice as much caffeine as Arabic coffee.

Columbia

Colombia ranks second in the world for green coffee production. Three main varieties are produced in this country, which take the name of each region where they are produced. Green coffees from Colombia have a high quality, which after roasted emit chocolate and citrus aromas. In the cup give a full body with slight acidity.

Ethiopia

Ethiopia is the country where the coofee was discoverd and Arabica coffee is widely produced. After heat treatment, coffees originating from Ethiopia exhibit floral and citrus aromas. They have a light body and acidity. It can be used as a coffee on its own or added to the blend contributing to its special aromas and flavors.

India

Green coffees from India are Robusta and Arabica varieties. They are classified based on the size of the grain and after the roasting process they show pleasant aroma and taste. They are ideal to be used in espresso blends as they are joined with the aromas and flavors of other coffees.

Costa Rica

Costa Rica's geographical position is exellent for the cultivation of green coffee. This area has a wide coffee culture and they produce high-quality coffee which after roasting presents the aroma of flowers, the taste of dried fruits and a creamy body. It has a pronounced acidity and is used for special coffee blends.

Santos Brazil

Santos Cafe is named after the port where it is it is traded. It is cultivated in Brazil, which is the first country in the world to produce and export raw coffee beans. After the roasting process this coffee emits sweet, intense aromas of chocolate, medium acidity, cocoa flavor and average body.

Uganda

Coffees originating from Uganda, are mainly Robusta, as about 80% of domestic production is occupied by these coffees. After roasting they will show orange and woody aroma. These coffees have a light body, with fruit flavor or tea. These coffees exhibit an acidity similar to that of wine.

Tanzania

The coffee cultivated in Tanzania is mainly of the Arabian type, but Robusta coffee is also cultivated in different areas. Tanzania's geographical position has created conditions for coffee to be cultivated almost all over the country, enabling the production of coffees with different characteristics. After baking they exhibit pleasant aromas, slight acidity, and fruit and flower flavors.

Mexico

Coffee originating from Mexico is produced in three areas: Chiapas, Oaxaca and Veracruz. From all three of these places come special coffees with special features. The presence of chocolate and dried fruits can be felt mainly in the profile of roasted coffee. They have a slight acidity, citrus aroma and creamy body.

Guatemala

Guatemala's geographical position has favored the production of very good quality coffee. This coffee is ideal to be used in blends and helps intensify the taste of chocolate, light and balanced aromas of flowers.
